Summer is quickly coming to a close. With the start of school less than a month away, back-to-school routines are already top of mind for the parents out there. Start the year off right by preparing quick, healthy meals for your family using ingredients from Earthfare, located in Morrison at Southpark.

Here are a few of our favorite easy-to-make meals to help your family ease into the back-to-school transition.

Monday: Broccoli Rice Skillet with Chicken, Artichokes & Roasted Peppers

Mix up your Monday with broccoli rice. Similar to cauliflower rice, this low-carb pasta substitute can be purchased in the frozen food aisle and is simple to prepare. Combine  with chicken, peppers and artichokes in one skillet for an easy meal that’s so rich and savory, the kids won’t even know it’s healthy. Get the full recipe here.

Tuesday: Crock Pot Pulled Pork Tacos with Mango Salsa

We would be remiss if we did not feature a fabulous taco recipe on Tuesday! This no-fuss crock pot meal can be prepared in the morning, then basically cooks itself throughout the day. Prepare the mango salsa when you’re ready for dinner to be served — and just like that, you’ve got flavorful, fresh tacos the whole family will love. Find the full recipe here.

Wednesday: Pineapple & Turmeric Cauliflower Rice with Salmon

Turmeric is one of the trendiest spices this season. Known for its many health benefits, the Asian plant is the star of this dish. The dish also features salmon, which is full of omega-3 fatty acids and a great source of protein. Trust us, this meal will give your gut a mid-week pick-me-up in minutes! Get the recipe here.

Thursday: Zoodles & Meatballs

For this fun take on spaghetti and meatballs, you’ll need a spiralizer. But it’s totally worth the investment! This appliance instantly turns your favorite veggies into noodles, whether you’re spiralizing zucchini, carrots or any other vitamin-packed produce.

For this recipe in particular, you can purchase freshly prepared meatballs from Earthfare’s meat department, along with one can of pasta sauce, three medium size zucchinis and parmesan cheese. This meal is super affordable, feeding a family of four for less than $20! Get the full recipe here.

Friday: Korean Pulled Pork Pizza

You survived the first week of school, and there’s no better way to celebrate with the kiddos than with some delicious pizza! These personal-sized pizzas can be cooked directly on a grill. Fire up the grill and spend the evening together soaking up the last drops of summer before school’s in full swing.
